Veal with tuna sauce

INGREDIENTS

Here is what you need:

  • Magatello of veal, about 1 kg
  • Onion 1 medium
  • Celery, 1 stalk
  • Carrot, 1
  • Tuna in oil, 180/200 g already drained
  • Firm yolks, 2 large
  • Desalted anchovies, 5
  • Salted capers, one heaped tablespoon
  • Extra virgin olive oil, 50ml + about 80ml for the sauce
  • Lemon (juice), 1
  • Dry white wine with strong acidity, 100 cl (about half a glass)
  • Laurel Italpepe, one handful
  • Italpepe cloves, 2
  • Salt, to taste.
  • Italpepe peppercorns, 1 level teaspoon

PROCEDURE

Follow our instructions:

  1. Tie the meat with twine to keep its shape.
  2. Dice the vegetables and pour everything into the saucepan along with the bay leaf, two cloves, 50 g of oil and the wine, salt and peppercorns.
  3. Now place the meat on top of the vegetables and cover with a lid that does not allow steam to escape.
  4. Cook on low heat for about 1 hour and 30 minutes, turning only a couple of times and letting any condensation that has formed on the lid fall back into the pot.
  5. When cooked, take out the meat and let it cool.
  6. Collect 3/4 of the cooking juices and mash them in a fine-textured masher.
  7. Combine the tuna, anchovies, and desalted capers and blend until smooth.
  8. In case the sauce is too thick, add a little oil to make it easier.
  9. Then add the crushed and sifted egg yolks and finally combine, in a trickle, the extra virgin olive oil and the juice of one lemon, stirring with a spoon as for a normal mayonnaise.
  10. Have the liquids absorbed slowly. When the sauce is clear and smooth, slice the meat thinly and serve it on a serving platter covered with tonnata sauce.
  11. Consume the dish at room temperature.
